Thanksgiving Leftover Meal Ideas

In this episode of Everyday Cooks Recipe Club, Stephanie and Kelly help you come up with ideas on how to breathe new life into your Thanksgiving dinner leftovers. Find out how to make your leftovers appealing again, after you have had that second or third plate and you don’t think you can do it again!

Here is the soup recipe Kelly talks about in the episode, but she always doubles the recipe.  This is also one of those recipes that you can “eyeball” and you don’t need to strictly follow the quantities.  So make it how you want! 

Creamy Ham and Broccoli Soup

4 t butter

4 t flour

1 can chicken broth or stock

1 c chopped broccoli

2 T chopped onion

1 c chopped ham

⅛ tsp fresh thyme

¾ shredded swiss cheese

Chop your broccoli and ham and put to the side.  Prepare your thyme and swiss cheese if you didn’t buy shredded swiss cheese.  Melt your butter in a sauce pan and mix in the flour to incorporate.  Slowly stir in the chicken broth (or stock).  Bring to a boil (about 2 minutes).  Stir in broccoli and onion. Then add the ham.  Stir in the cream and thyme.  The last step is to stir in the swiss cheese.
